研究兴趣主要集中于先进冷冻冷链技术、先进凝胶化技术等领域,研究内容偏重于食品加工与保藏技术、食品工程技术,了解研究领域的技术发展现状及产业发展现状。北卡罗来纳州立大学(NCSU)食品、生物工程与营养科学系,海洋食品实验室(Dr. Lanier)及先进加工技术中心(Dr. Farkas)访问学者。在Journal of Food Engineering,Food and Bioprocess Technology 等国内外刊物发表学术论文70多篇,申请专利20项,授权近10项。主持各类省部级科研项目10多项,多个项目实现产业化。
